2. What are the varieties of Japanese tea? Where is it produced?
To become a connoisseur of tea, you must know what kind of tea is available today. In fact, nearly 80% of the Japanese tea produced in Japan today is of the “variety” named “Yabukita”. It is often called "Yabukita tea", but there are different varieties of tea, just like rice.
Therefore, whether you like tea or not, it may actually be "Yabukita tea".
So why are the tastes so different even though they are the same breed?
This is because the taste of tea is created by the climate of the land. Even with the same "Yabukita variety", the taste of tea produced in Shizuoka and Kagoshima will be very different, and the way the farmers grow the tea will also be very different.

Currently, the two major production areas of Japanese tea are Shizuoka Prefecture and Kagoshima Prefecture. Nearly 40% of the total is produced in Shizuoka Prefecture, and nearly 20% is produced in Kagoshima Prefecture.
In Shizuoka Prefecture, nearly 80% of them produce the "Yabukita variety". And as a feature of the production method, "outdoor cultivation" is the center.
In Kagoshima Prefecture, 50% of the varieties are Yabukita, and other varieties such as Yutakamidori and Asatsuyu are produced. To summarize, the taste of tea is different even if the same variety is cultivated outdoors and covered. There are also differences in the way tea is made in each production area, and the taste is also different.
