2022 new tea Kagoshima new tea, Yame new tea, and Shizuoka new tea are being tasted!

Every day, we receive unrefined tea from all over the country (tea at the farmer's stage: stems and powder together) and finished tea (sencha, powder, and tea without stems)! ! We are repeating the tasting, but it looks like we will be able to deliver a delicious new tea that will be pleased again this year! !
In the photo above, the top is aracha and the bottom is finished tea (sencha). Freshly picked Shizuoka green tea from Shizuoka Kakegawa and around Kikugawa! !
The weather is not stable this year, so the tea growers are more cautious than usual, checking the weather forecast and the growing conditions of the tea plantations before picking tea.
We cannot control nature, but we can anticipate and prepare for it. And this accumulation makes a big difference in quality.
And my job is to look at the tea leaves that have been picked and taste them to see when the tea leaves will be the most delicious for customers, and to refine them to the best condition.

I thought melons were the easiest to understand, so I prepared a photo of a delicious-looking melon (laughs).
If it is a melon that is given as a gift, I think there is a guideline for when it will be best enjoyed, such as "5 days after refrigeration and 3 days at room temperature". Also, if you are a polite producer, you will be taught how to cut it and eat it cold, and how to eat it delicious.

In the case of melons, if the melon arrives at the customer in a ripe state, it will be too ripe if it is not eaten immediately, and if it is cut too soon, it will be hard and tasteless. I used melons as an example, but with any crop, picking it when it is in good condition and delivering it to the customer when it is ready to eat is an essential condition for delivering true deliciousness.

And Japanese tea is also an agricultural product, so it is the same.
We believe that there are 5 steps to create delicious tea.


① Carefully select tea leaves in good growing conditions from producers who grow them with love

2) Refining manufacturing methods that suit the tea leaves together with producers

3. Thinking about customers and always sharing with producers what kind of tea leaves will please customers.

④ Properly plucking tea leaves that are pleasing to the weather, making high-quality unrefined tea, and adjusting the finishing method to suit the unrefined tea.

⑤ Introduce the tea utensils that match the tea leaves you have created, and carefully explain how to put them in.

Having these five points polished to a high level and having a good match are the conditions for delivering delicious tea.

This year, I will be in Shizuoka, but even in Yokohama, I will be tasting new tea every day and discussing the weather conditions and the growing conditions of tea plantations with producers.
By doing so, I imagine the situation of the tea plantation in the production area, and always think about when and where to purchase new tea leaves that will truly please customers.
As I was writing this article, I felt from the bottom of my heart that the original fresh tea from our garden was born thanks to the cooperation of many people.
And because there are many customers who are looking forward to it, I can do my best with my friends! !
